Cook the rice using the absorption method. Read the pack to get that or just use the rice cooker like I do. They are the best appliance ever. If you want to make sushi rice, sprinkle over the vinegar, then add salt and icing sugar to taste. This is a real lazy sloppy way of doing it and I apologise to a culture that spent thousands of years perfecting their cuisine. Or just chuck some salt in to taste (more than you would think). Mix it in using a chopping motion like kung fu, rather than stirring which mushes up the rice. Fry the chicken in a pan with a little oil. When it is nearly done sprinkle over the soy sauce and let it go all sticky. This is a real pain if like me you don't wash the pan and get up in the morning and want to cook bacon and eggs. For the omelette mix the eggs, soy sauce and sugar together with a fork until it is an even mix (not yolk and white streaky). Put oil in a med hot pan and pour a really thin layer of egg in. When just cooked the spatula roll it up and leave it in the side of the pan. Pour another thin layer and when just cooked then roll the first bit of omelette in that layer. Keep going until all the mixture is used up. You will need to add more oil in between layers so it doesn't stick. It takes a bit of skill to do it, I was useless but now I am quite good. Slice the omelette into 1/2cm slices. My lovely friend Nicola who is very smart couldn't get my instructions, so they must be dumb instructions. So I had to learn how to embed a video. Just call me Bill Gates. They put sake and stuff in theirs. I never have that lying around. (actually a lie). Serve everything on different plates with soy sauce and mayo and everyone can make their own rice topped with whatever. You can add any other veges, but meh. Interesting or maybe not so interesting fact: My 10 year olds favourite present this Christmas was a mini bottle of Japanese Mayo. Weird huh!
