13/12/2019 0 Comments BANANANANANA-SPLITSBanana Splits are the best thing ever. We had burgers for dinner tonight. We might do a whole week of burgers. I'm gonna do fried chicken and jalapeños and Monterey Jack Cheese. It wouldn't even be Monterey Jack Cheese because they don't sell it in New Zealand or if they did it would be way too expensive for the likes of me who has added more children into the mix. The 10-year-old stepdaughter told me she has only had banana splits twice. Once at the chataux (so fancy - obviously NOT with us) and once here. I know it is spelled differently - it's a meme. I was gonna make the chocolate sauce but some hungry gutted child used all the chocolate chips making cookies. It was actually the 17 year old, but she didn't bake the cookies for ages, so I ate copious amounts of the cookie dough out of the fridge and then complained today that I am not as skinny as my teenaged girls. They're total skinny bitches and just do it to spite me. They ate all the cookies too.
Anyway this is the best for using up the "why the fuck did I buy bananas it's not even term time and nobody eats them even then". And it makes ice-cream seem healthy. Which it actually mostly is. Probably. I also found chopped nuts when I cleaned out the fridge. Holy shit that was a mission - don't even ask. They smelled OK but were barely passable to be honest. I like chopped nuts because they only cost 79c a packet but tend to grow moths. I got some moth catchers from Briscoes and they rock. They initially caught the 17-year old so that was a good sign and now they have caught a billion moths. Gross. Not good moths like puriri moths. Just the dumb pantry moths. Puriri moths are MASSIVE, the cat bought one in once. You need (for 4)

14/1/2019 0 Comments Key Lemon PieSo after my trip to New Plymouth in which I had a quazillion lemons to use up, my friend Jacky came to dinner. I made the Kofta and a Raita and marinated a chicken and for dessert made this up because I had a can of sweetened condensed milk. I was planning to make Russian fudge with it, but that seemed too much of an effort. This is based on Key Lime Pie, but uses Lemons, because no-one in the world ever had excess limes. it was actually delicious as. I might put the Raita recipe up, that uses lemon too.
For the base you need to make this pastry. It's easy because it just uses butter, flour and a little bit of oil and sugar which you have in the house already, even if it's almost payday. Making pastry is really scary and daunting, but this is easy and it never fails. People think you're amazing when you can make pastry - they're all like "oooh you made pastry". All those pastry links go to the same place, which is my blog post, and then you have to click through to the actual recipe. That's annoying huh. You know what really is annoying: the war in Syria (here's a great cartoon on the causes). Anyway that's enough politics, but two clicks isn't even that hard after thinking about it is it? 6/2/2017 0 Comments Chocolate CheesecakeOMG chocolate cheesecake is the best thing ever. I was having a BBQ. (teenager: "ew people") and wanted to make one, but when i googled the ones on line were all dumb with heaps of ingredients, so I thought I'd make up my own recipe.
Two of the people coming to my BBQ are coeliac so it was doubly worth making it gluten free. Last time I made a cheesecake Sharyn had to just scrape off the top. You can make the base any way you want. It is super rich. The teenager managed to come out and eat two pieces. (ew, I'm not talking to them). You should totally cook this today. Oh and see in the post below this, Gayle was pregnant. Now she isn't because she birthed a beautiful beautiful daughter. Yay! You need:
7/7/2016 0 Comments Fruit PanacottaThis is from my friend Gayle, who got it from her Mum, in much the way the flu is shared. She called it Yoghurt Jelly Dessert, but I renamed it. I ate it a BBQ and it was yum as she did a berry one. The BBQ was ages ago, November last year and finally today she saw me at work and in her hot little hand was this recipe. Yay Gayle you're the best (and she's gonna be a mama again. woohoo)
It's low sugar too, so you can be all no sugar about it.
20/1/2016 0 Comments Easiest Sponge ever.OK, so I was in the foursquare and was rummeging through the frozen meat, which is a real good deal there and next was a trifle sponge frozen - for just $2, so I grabbed it, and fresh custard was on special so I was going to make a trifle. Then as I was heading to the fruit area, I remembered that I hate trifle with a passion. but I couldn't be bothered to walk back to the freezer so I bought the sponge and custard 'to use' which I did, and it was a winner!

So I was going to a pot luck dinner and promised to make a dessert. I was going to make a cheesecake but what a pain with all that cutting and putting into bowls and then a small child runs into you and makes you drop it and you have to smile and say "that's fine" when really you want to lose it because you really needed that piece of cheesecake and when you look over at the table there's just one manky bit some little shit has poked with their finger. Oh so I made truffles. Ingredients 1 cup Chocolate chips (I made two lots milk and white - use pams they're great) 1 thing of Philly Cream Cheese - you could use another sort, but get traditional (never ever spreadable) or they will be soft. 1/4 cup icing sugar cocoa or coconut or crushed up flake to roll them in (eat the big bits of flake that don't crush when the kids aren't looking) Melt choc chips in microwave. put in a bowl or jug and microwave for 30s, stop stir, and repeat until they are liquid. They will pretend not be melted but they will be. Get a kid to do this - it's really boring. Beat cream cheese with electric beater til soft. It's better to have it at room temp - I just buy it then don't bother to unpack the shopping and then it is perfect. Add icing sugar and beat Stir in chocolate. Beat it in for all I care. (If you are being fancy like I was and making white and brown, do the white ones first.) Put in the fridge for an hour while you go "shit I promised to make a salad, and corn fritters for my vegetarian daughter who only ate three mini ones and I cooked a billion" With clean as hands take a teaspoon full and roll into balls and then into the outside stuff - roll them and then toss quickly from hand to hand so the excess falls off. Do the white choc ones first - do the coconut coated ones and then the flake and then the cocoa - then wash your hands and start with the milk or dark choc. mood rating: prepared, because you have to make it in advance Time: about 15 min, in the morning or night before I made this up when i bought some sponge fingers to make tiramisu but then realised I hadn't bought any of the other required ingredients. But this was Yum as. and the very best bit is the kids didn't like it that much, so I got to eat their left overs and there was some for the next night. you need
Beat the cream cheese and sweetened condensed milk together with an electric beater. If you do it by hand it will not be smooth and will have little lumps. Pour the ginger ale into a shallow bowl, and pour yourself a glass to enjoy Dip the sponge fingers in the gingerale. You want them wet but not falling apart soaked Put the sponge fingers in a single layer in a square dish. A glass one would be good because you can see the layers, it could be round but then you have to break the fingers up a bit. Spread over cream cheese mix. You will have to do some figuring here because you want to do layers of sponge fingers - cream cheese - sponge fingers - cream cheese - and so on. I think I only did two layers, but you will have to work it out for your dish size Sprinkle with cocoa through a sieve to get rid of any little lumps. You could use crumbled up flake, or you could buy a flake and eat it and then put cocoa on. That's what I did. Leave in the fridge all day, or overnight. Keep this recipe a secret and people will think you are incredible. 25/5/2014 0 Comments Best ever dessert for kidsskill rating: so so easy mood rating: tired as Time: about 2 min My kids don't eat gingernuts very often, which means this dessert is a treat... 1 packet of gingernuts 1 can sweetened condensed milk (Nestle - the others are made of powdered milk and are a bit grainy) Get a cute little tiny bowl (go to the opshop and get a special one each for your kids) Put condensed milk in the bowl and 4 gingernuts on a plate That's it. Dip the gingernuts in the SCM. Stand in the kitchen so they can't see you and eat the rest of the condensed milk out of the tin. |
