mood rating: fairly tired... Time: about 10 min from go to whoa This is really a lunch dish, or (today) a 3.30pm dish, but is yum. You need: bread of some sort. I used little french sticks which are cheap as on the weekend, but any bread will do sliced, toasted, white grainy - what ever a little can of tuna, flavoured/unflavoured - doesn't matter. Cheese (as usual) a handful of grated Mayo or Aioli Onion - I used spring onion, but any onion would do - just chop really finely if it is a white onion cos you don't want a big oniony chunk. You only need about a tablespoon Tomatoes - optional chopped up about 1cm dice (about 1/2 - or a few cherry tomatoes cut into quarters) Dump tuna in a bowl, leave for a minute or so while you get he other stuff out and then drain off any oil Stir in a big tablespoon dollop of mayo. Stir in Cheese Add onion and tomato and stir Put on bread about half cm thick and grill for 3-4 min until bubbling and golden-ish Yum. you could serve with some green things for dinner.

mood rating: tired and stressed (the type of stress when you can't find a kid, but are pretty sure they are OK, but then start to panic, because you aren't sure where they are but don't want to call the police yet because you will sound like you are really irresponsible so you have gone for a little drive to try and find them, but they have come home safe, but it is really late now) Time: about 25 min You need: A stock cube A head of Cauliflower An onion Couple handfuls of grated cheese Fry onion in a little oil for about 3-4 min until soft (just cut it into big chunks - you're going to blend it later) Add cauliflower cut into smallish pieces and cover with boiling water from the kettle Boil for about 15 minutes until soft Add stock cube now because you have forgotten to add it earlier. Stir in grated cheese. Serve with toasted bread-type things, buttered bagels are good. Make the kids eat at least 3 more big spoonfuls after they complain about it. mood rating: normal tired Time: about 15 min I'm a bit fussy on sausages. I used to really like sizzlers but then they tasted a bit like sawdust, which I have never eaten but I like the smell of, so they probably don't if I'm honest. I like the real type sausages even if they're made from bums and lips. Anyway this is the best way ever to cook sausages, even if the first time I saw it I said "Liane, WTF?!" Put sausages in pan. Pour over water. Yes Water! Enough to just cover them. Bring to the boil without a lid The water will evaporate, and cook the sausages. Once the water is gone the sausages will brown. Absolute brilliance! Serve wrapped in white bread with tomato sauce. If you have leftover sausages don't bother checking out the 'Leftover Tabs' there are no recipes there for them. 25/5/2014 0 Comments I have some vegetables.skill rating: easy mood rating: tired but you've already had takeaways once this week Time: about 15 min You need - eggs 1-3, if you have only one, you have to use less veges - 1 or 2 potato peeled and grated - other veges peeled and grated (pumpkin, kumara, zucchini...anything grateable really) - cheese about 1/2 - 1 cup grated Mix grated veges and cheese with beaten egg. There should be enough egg to coat everything, but not so much it is swimming in egg. Heat pan, and add oil or butter. (should be about medium) Add spoons of veges and push down with the back of the spoon to flatten Cook for 4 min Flip and cook 4 min (you don't want it too hot, or it will burn - it needs the cooking time so that the potato cooks) I have in the past added a little can of tuna to this. You could also add left over shredded ham chopped up finely. skill rating: sorta easy mood rating: panicked - for when you have nothing but some eggs and baking stuff (but you do need milk) Time: about 15 min This works when you really need to go shopping and only have a couple of eggs left (and some baking stuff) - this is enough for about 3 people You need - 1 egg - 1 Tablespoon sugar - 1 1/2 cups of flour - 1 1/2 teaspoons of baking powder - 1/2 teaspoon baking soda (if you have none, just use baking powder) - 1 Tablespoon butter or oil - milk Beat egg and sugar together Add flour and baking powder and baking soda, and mix Add melted butter or oil Add milk slowly to form a thick batter (it won't mix in properly at first, but keep stirring) don't add too much milk at the start; add a bit and wait until it is mixed in. Optional extras Mash the kids manky old bananas they have brought home (and you intended to make a banana cake with but never did) and stir in Grate an apple or two and add in Make chocolate ones - add a couple of tablespoons of nutella-type spread Never ever ever add feijoas in because that would just be revolting Heat pan, and add oil or butter. Pour in pancake batter Wait until bubbles in the middle pop Flip and cook 30 second Keep going until all the batter is used up Now the best bit....Fake syrup.... I've got a frozen chook and 5 minutes in the morning Time: about 5 min This is theoretically not the best thing to do, because the centre of the chicken may be at the risk range for breeding bacteria to make you sick. Do this at your own risk. Camplyobacter and Salmonella are yuckity yuck diseases to get. I have made this heaps and never got sick. Next time I make it I bet I get really sick. You need: - Frozen Chicken Remove chicken from plastic bag Put chicken in slow cooker Cook on low for 6 hours (or until you get home) Serve with Salad and bread rolls Rice and sweet chilli sauce, and some greens 25/5/2014 0 Comments Easy as chicken stockskill rating: easy as, and better than the bought ones mood rating: need a bit of motivation for the end part: but I put it here because you already made the chicken in a slow-cooker Time: about 5 min set up, about 15 min at the end You need: - One cooked chicken carcass Take chicken carcass and pick the meat off. Save this for soup or sandwiches Put the chicken in a slow cooker, cover with water. Bung in left over veges if you want Cook on low all day. NOW do this end bit even if you get home and are really tired. Under NO circumstances leave it to do later. You WILL NOT do it later. Put sieve or colander over big bowl Dump chicken carcass into bowl. Double bag chicken bones, and put in bin so the dog won't eat it Put the chicken stock into a jug and use it.
