25/5/2014 0 Comments Cauliflower Soup (is yum)skill rating: easy easy
mood rating: tired and stressed (the type of stress when you can't find a kid, but are pretty sure they are OK, but then start to panic, because you aren't sure where they are but don't want to call the police yet because you will sound like you are really irresponsible so you have gone for a little drive to try and find them, but they have come home safe, but it is really late now) Time: about 25 min You need: A stock cube A head of Cauliflower An onion Couple handfuls of grated cheese Fry onion in a little oil for about 3-4 min until soft (just cut it into big chunks - you're going to blend it later) Add cauliflower cut into smallish pieces and cover with boiling water from the kettle Boil for about 15 minutes until soft Add stock cube now because you have forgotten to add it earlier. Stir in grated cheese. Serve with toasted bread-type things, buttered bagels are good. Make the kids eat at least 3 more big spoonfuls after they complain about it. Crumble in some blue cheese if you have some left over from friends coming over in the weekend.
