25/5/2014 0 Comments I have some vegetables.skill rating: easy mood rating: tired but you've already had takeaways once this week Time: about 15 min You need - eggs 1-3, if you have only one, you have to use less veges - 1 or 2 potato peeled and grated - other veges peeled and grated (pumpkin, kumara, zucchini...anything grateable really) - cheese about 1/2 - 1 cup grated Mix grated veges and cheese with beaten egg. There should be enough egg to coat everything, but not so much it is swimming in egg. Heat pan, and add oil or butter. (should be about medium) Add spoons of veges and push down with the back of the spoon to flatten Cook for 4 min Flip and cook 4 min (you don't want it too hot, or it will burn - it needs the cooking time so that the potato cooks) I have in the past added a little can of tuna to this. The chilli one. It was quite nice from memory. You could also add left over shredded ham chopped up finely.
