25/5/2014 0 Comments Easiest ever muffinsThese are so quick and easy, really really easy. I don't even know why I hardly ever make them. Especially when last night when I was rooting around in the freezer I found a whole heap of berries hiding underneath the meat that was on special but now I don't want to use, and the bits of broken flaky pastry sheet that has fallen out of the packet. The ones in the photo are apple and cinnamon, I made them look flash by whacking a bit of lavender on the side. I also chucked in some coconut, chia and cranberry instant oats to replace some flour. God knows why I bought that flavour because Coconut is pretty yuck, I went instant oat Crazy and bought 6 boxes at once. The teenager girl thought the muffins were great until I told her they had those oats in them, then she said I thought they tasted a bit weird and yuck - moral of the story don't tell kids anything they don't need to know. Hardly anyone ate them at the shared lunch. But those who did said they were delicious. so there. skill rating: easy as mood rating: you need a bit of motivation, but they are so easy really you will be suprised Time: about 25 min you need (this is a small amount but you should double it, but often you only have one egg. I am not sure if you have one egg, but I often do. It is feast or famine with eggs in our house) 1 cup flour 60ml oil ¼ cup sugar 1 egg 2 teaspoons baking powder ⅓ cup milk ¼ tsp cinnamon ½ cup Blueberries (or any fruit you want, just chop it up and chuck it in Muffin papers 6-8 - if you don't have any, as I never do, just wipe them with oil (use a paper towel) and then put a bit of flour in and shake the tins so it sticks to the oil.
The really best thing about the recipe is this. You can leave out the egg and it will work. You can use yoghurt (again the manky left over yoghurt from school lunches) instead of the milk. You can be a bit sloppy - like if you only have 30mls of oil left you can just add an extra 30ml of milk. If you run out of milk just add water. No blueberries, just chop up some apple or banana. Really this is the coolest recipe ever. In fact you don't even need a recipe, you can just add random crap.

skill rating: easy as mood rating: fairly keen, and feeling a bit smug about being organised Time: about 20 min you need - 4 sausages - flash ones, not the budget chipolatas, but if you go to pak'n'save after the weekend they are always marked down, - 1 sheet of puff pastry. Cut pastry into quarters Put a sausage on each one and roll up. Use a wet finger to glue the edge down. Put seal side down and cut into 4 make some little slashes on the top. Brush with milk if you want, it doesn't really matter but they look better with milk on top. If you are rushing put milk in a glass and smear it on with your finger. I love shared meals at work. Except when I have to contribute. Only because when I get the email, in my head I plan to make some thing really fantastic, but in reality I remember the night before at 9pm and swear alot. If you work with me, I won't make this but you can. I will have forgotten about it and would have bought a pack of sausage rolls on the way into work. skill rating: easy easy mood rating: what can I make in 5 mins before I leave to work which makes it look like I care Time: about 5 min you need - 1 cup grated cheese - 1 tin chilli beans (hot ones please if you're making it for me) - 1 tub sour cream (lite or full fat...won't make much difference, use light if you're premenstrual it'll make you feel like you're doing something) Put everything in a bowl, with a stick blender mash it all up until it is pretty much smooth. Serve with Corn chips. Or bagel chips or pita chips but they're too expensive to waste on workmates and come in those tiny little bags. When school says something to contribute to a shared lunch but I'm a) broke b) stuffed and c) too proud to send them with a bag of chicken chips. skill rating: easy as mood rating: stressed because the kids only told you about the shared lunch last night Time: about 15 min you need - white bread - toothpicks - jam - butter if you can be fagged spreading it, I always find it rips white bread and then you have to try and patch it, and it looks crap, but some people are a bit anal about jam and butter. Get a life FFS. Spread jam onto bread. Cut off crusts Roll up With a serrated knife and a light touch, gently cut the rolls into 4 and secure with a toothpick. (if you are too rough they will squish and go oval. Not good AT ALL) But I have no toothpicks! What self respecting person has no toothpicks? Make jam sandwiches, with your tiniest cookie cutter cut into hearts or stars. you should get about 5 per sandwich (4 in the corners and one in the middle - hide the ones that got a bit of crust on them under the good ones). Make 6 Sandwiches, and you get 30 cut outs. If you're feeling generous make a selection of stars and hearts. Time: about 15 min (and oven heating up time) you need - 1 cup of peanut butter - 1 egg - 1 cup of sugar Turn on oven to 180C Mix together Put teaspoon lots on to baking paper Squish with a fork so it is obvious they are homemade Bake at 180C for about 6-8 minutes. Don't overcook. Sorry to people with peanut allergies. Label them gluten free and feel really smug. |
