25/5/2014 0 Comments Easiest ever muffinsThese are so quick and easy, really really easy. I don't even know why I hardly ever make them. Especially when last night when I was rooting around in the freezer I found a whole heap of berries hiding underneath the meat that was on special but now I don't want to use, and the bits of broken flaky pastry sheet that has fallen out of the packet. The ones in the photo are apple and cinnamon, I made them look flash by whacking a bit of lavender on the side. I also chucked in some coconut, chia and cranberry instant oats to replace some flour. God knows why I bought that flavour because Coconut is pretty yuck, I went instant oat Crazy and bought 6 boxes at once. The teenager girl thought the muffins were great until I told her they had those oats in them, then she said I thought they tasted a bit weird and yuck - moral of the story don't tell kids anything they don't need to know. Hardly anyone ate them at the shared lunch. But those who did said they were delicious. so there. skill rating: easy as mood rating: you need a bit of motivation, but they are so easy really you will be suprised Time: about 25 min you need (this is a small amount but you should double it, but often you only have one egg. I am not sure if you have one egg, but I often do. It is feast or famine with eggs in our house) 1 cup flour 60ml oil ¼ cup sugar 1 egg 2 teaspoons baking powder ⅓ cup milk ¼ tsp cinnamon ½ cup Blueberries (or any fruit you want, just chop it up and chuck it in Muffin papers 6-8 - if you don't have any, as I never do, just wipe them with oil (use a paper towel) and then put a bit of flour in and shake the tins so it sticks to the oil.
The really best thing about the recipe is this. You can leave out the egg and it will work. You can use yoghurt (again the manky left over yoghurt from school lunches) instead of the milk. You can be a bit sloppy - like if you only have 30mls of oil left you can just add an extra 30ml of milk. If you run out of milk just add water. No blueberries, just chop up some apple or banana. Really this is the coolest recipe ever. In fact you don't even need a recipe, you can just add random crap.
